Do you remember going fishing when you were young and coming home with your fish? No doubt mom would cook them and you would be so proud. I don't know how she prepared them but if you came home with catfish, this would have been a good choice-Corn Flake and Pecan Coated! And sometimes when the cupboard was going rather bare, maybe you enjoyed a Tuna Noodle Casserole! We were really into using canned soups back then. This recipe calls for cream of celery, however, cream of mushroom is just as good. Use the one your family likes best.
OLD FASHION TUNA NOODLE CASSEROLE
6-oz (3 1/2 cups) medium noodles
1 can (6 or 9-oz) flaked tuna, drained
1/2 cup mayonnaise
1 cup sliced celery
1/3 cup chopped onion Rolex Replica
1/4 cup chopped pimiento
1 tsp salt
1 can cream of celery soup
1/2 cup milk
1 cup shredded sharp process cheese*
1/2 cup slivered, blanced almonds, toasted
Cook the noodles in boiling water until tender, drain.
In a large heat-proof bowl combine the noodles, drained tuna, mayonnaise, celery, onion, pimiento, and salt.
In a saucepan blend the celery soup and milk together; heat through. Add the cheese, cook and stir until the cheese melts. Add the soup/cheese mixture to the noodle mixture.
Turn oven on Rolex Replica to 425 degrees.
Lightly grease a 1 1/2-quart casserole dish and pour the casserole mixture into the dish. Sprinkle the almonds over the top. Bake at 425 degrees for 20 minutes.
*May use 1/2 a can of Cheddar cheese soup, if desired.
CORN FLAKE-PECAN CRUSTED CATFISH
1/2 cup corn flake crumbs
1/4 cup finely ground pecans
1/4 tsp paprika
1/8 tsp garlic powder
1/8 tsp cayenne
salt and pepper to taste
1 lb catfish fillets, cut into 4 pieces
1 egg white, slightly beaten
Preheat oven to 450 degrees.
Grease a baking pan; set aside.
In a large plastic bag combine the corn flake crumbs, pecans, paprika, garlic powder, salt, pepper and cayenne.
Dip the catfish into the egg white then shake in the crumb mixture. Place on the greased pan.
Bake fish at 450 degrees for 15 to 20 minutes or until the fish flakes easily with a fork.
Serve with a salad or slaw and a vegetable of your choice for a tasty meal. Some good old-fashioned hush puppies would be a good idea, too.
